Giant fish on the Menu at Liverpool’s London Carriageworks on Hope Street

Hope Street chef Paul Askew’s fish delivery really tipped the scales.

 

This 25-year-old halibut weighs more than 10 stone, and was caught yesterday morning in the North Sea, off the Scottish coast.

 

Paul said: “I got a call at 6am saying it had been landed and I snapped it up. A fish of this quality only comes round once in a blue moon.”

 

He bought the monster fish from Wards Fish, of Birkenhead market. It took two people to carry it into the kitchen.

 

By 6pm yesterday, he had filleted and portioned the fish, ready to put it on the menu at the London Carriage Works.

 

Unsurprisingly, fish will be on the menu for most of next week.

 

He said: “I’m making pan-roast fillet of wild Scottish Halibut with English risotto of leeks, wild mushrooms and barley. It’s a special fish and it deserves a special recipe
