Hilton Liverpool has unveiled its revolutionary new £1.2 million state of the art kitchen and sets its sights on the UK and European acclaim.
The kitchen is set to service the catering for the new 215 bed hotel and concept restaurant Exchange with gourmet food and service.
The catering facilities installed in the Hilton Liverpool are among the most expensive kitchens in Hilton globally, confirming Hilton’s commitment to providing cutting edge facilities.
The 90 square metre cooking operation has had bespoke, fully fabricated stainless steel units fitted designed to reform the efficiency of food flow and create an ergonomically superior cooking environment.
The Head Chef of Hilton Liverpool Matthew Burns, comments: “My vision for the inner workings of the kitchen has truly been realised. I feel the design and conception of the kitchen has taken all the best aspects from the other 5 star venues I have worked with and have made them even better.”
The Exchange Restaurant’s menu has been developed with traditional dishes from the North West but created with a modern British twist.
With something to suit everyone, Matthew Burns is including his signature dish on the Exchange Restaurant menu of Pennine venison loin braised shoulder, with venison fagots, roasted turnips, beetroot and mulled pear.
Sourcing the best possible ingredients the team have tirelessly looked to keep suppliers local with over 70 per cent of all the fruit, vegetables, meat and fish coming from the North West. Chef Burns continues: “We have been working with new regional suppliers to build our seasonal menus. Not only is this better for the environment but less travelled food arrives fresher, better tasting and more attractive on the plate.”
With the Hilton Liverpool Hotel and the Exchange Restaurant opening their doors to its first customers on the 17th of November the excitement is building with bookings for the both rooms and tables coming in thick and fast.

The catering facilities will not only be restricted to the Exchange Restaurant but will also create menus for private events, functions and banquets, room service and executive floor dining.
